Flaouna could definitely be characterized as a perfect link between Cyprus and Easter.

Heart Cyprus has come up with 3 fun ways of preparing this traditional food.

RECIPES:

The dough for the traditional and sweet way (8 Flounes):
  • 500gr Flour
  • ½ glass seed Oil
  • ½ tsp. Mahlab
  • 1 sachet  Yeast
  • ½ tsp. Mastic
  • pinch of salt
  • 2 glasses warm water

 

The filling for the traditional way, sweet way and the muffins (16 flaounes):
  • 4 eggs beaten
  • 6 Yolks beaten
  • 750gr Kefaloturi
  • 250gr Halloumi
  • 1 tsp. Mastic
  • ½ tsp cinnamon
  • 2/3 cup mint
  • 1 tsp. Baking powder
  • Spread: 2 eggs & sesame

The sweet way: 
  • 2tsp. Sugar
  • ½ cup raisins

 

The Muffins:
  • 3tsp. flour

 

The process:
  1. In a bowl put the flour and add the oil.
  2. With your palms rub until they become a body. Add the salt, mahlap, mastic and yeast and stir.
  3. Add the warm water and knead.
  4. Allow the dough to  “rest” for 2-3 hours.
  5. Rub the cheese and knead with the eggs. Add the remaining ingredients then cover them and leave them for two to three hours.
  6. Then gently knead again the dough and roll it to get a round sheet.
  7. In the center of each sheet put a couple of tablespoons of filling and fold the four sides inward. Press the corners with a floured fork and place in pan.
  8. Spread the flaounes with beaten egg and sprinkle with sesame seeds.
  9. Bake in a preheated oven (200 ° C) for about thirty minutes or until they rise and browned.

 

For the sweet way:
  1. In the existing filling we add 2 tsp. Sugar and ½ cup raising and stir.
  2. In the center of each sheet put a couple of tablespoons of filling and fold the four sides inward. Press the corners with a floured fork and place in pan.
  3. Spread the flaounes with beaten egg and sprinkle with sesame seeds.
  4. Bake in a preheated oven (200 ° C) for about thirty minutes or until they rise and browned.

For the muffins:
  1. In the existing filling add 3 tsp. Flour.
  2. Then put couple of tablespoons of filling in the muffin forms.
  3. Bake for 20 minutes (180° C)
