Our cuisine is amazing. We all know how many delicious and healthy options we have. Recently our team went to LidlCyprus, got some fresh products and prepared two delicious traditional Cypriot recipes – a Haloumoti and an Eliopita cake.

Eliopita cake recipe (for 10-12 individuals)

Ingredients:

2 cups of sliced black olives

​​1 cup freshly squeezed orange juice

3/4 cup olive oil

1 finely chopped large onion

1/2 cup finely chopped fresh mint leaves

1 cup freshly chopped coriander

4 cups all-purpose flour

2 teaspoons baking powder

1/2 cup of sesame

Execution:

Preheat the oven to 180oC. In a bowl, mix the olives, coriander, mint and onion. In another bowl, put the flour, baking powder and olive oil. and mix  the mixture until it is soft. Then you should pour the orange juice and mix again. Go on to pour the mixture with the olives into the mixture with the flour and knead to make a homogeneous mixture. Add half the sesame and knead again. Take a medium-sized baking sheet and pour some some oil and flour on it. Put the dough on the pan, sprinkle it with the rest of the sesame and place it in the preheated oven for about 35-40 minutes or until it rises.

 

Cypriot cheese pie

Ingredients:

3 cl. flour

5-6 mahlepi granules

4-5 mastic granules

4 teaspoons of baking powder

6 eggs

1/2 cup of oil (sunflower oil, corn oil, etc.),

2 teaspoons of dry mint

2 cups Halloumi

1 cup tepid milk 

Execution:

Preheat the oven to 180 ° C. Place the mehlepi, mastic and a little flour in a mortar and beat until it becomes powdery. Put the mixture in a bowl, add the remaining flour and baking powder and stir. Then, pour the eggs into the mixer and beat at moderate speed until they are flushed. Next, put the oil, the mint, the halloumi, the milk and continue mix. Then, keep adding a little flour at a time and stiring. Go on to grease and flour a round form with a hole in the middle and pour the mixture in. Bake in the preheated oven for 50 minutes. To see if the cheese pie is baked, poke it at the centre with knife blade, if it is dry, then it is baked and if not then leave the cheese pie in the oven for a while.

Tip-If you like sesame, sprinkle with 3-4 tablespoons on the cheesecake surface before baking it.
