Heart Cyprus has come up with 3 fun ways of preparing this traditional food.

RECIPES:

The dough for the traditional and sweet way (8 Flounes):

  • 500gr Flour
  • ½ glass seed Oil
  • ½ tsp. Mahlab
  • 1 sachet Yeast
  • ½ tsp. Mastic
  • pinch of salt
  • 2 glasses warm water

The filling for the traditional way, sweet way and the muffins (16 flaounes):

  • 4 eggs beaten
  • 6 Yolks beaten
  • 750gr Kefaloturi
  • 250gr Halloumi
  • 1 tsp. Mastic
  • ½ tsp cinnamon
  • 2/3 cup mint
  • 1 tsp. Baking powder
  • Spread: 2 eggs & sesame
  • The Flaouna filling
  • The Flaouna filling

The process:

  • In a bowl put the flour and add the oil.
  • With your palms rub until they become a body. Add the salt, mahlap, mastic and yeast and stir.
  • Add the warm water and knead.
  • Allow the dough to “rest” for 2-3 hours.
  • Rub the cheese and knead with the eggs. Add the remaining ingredients then cover them and leave them for two to three hours.
  • Then gently knead again the dough and roll it to get a round sheet.
  • In the center of each sheet put a couple of tablespoons of filling and fold the four sides inward. Press the corners with a floured fork and place in pan.
  • Spread the flaounes with beaten egg and sprinkle with sesame seeds.
  • Bake in a preheated oven (200 ° C) for about thirty minutes or until they rise and browned.
